Greens-to-Go

I've worked on the road for most of my professional career, which has always created challenges for my nutrition. Regardless of the physique, finding quality meals for the road can be a battle.
From fasting, to protein drinks, and even the era of convincing myself that Chik-fil-a salads were the answer and somehow WEREN'T going to cripple me financially. Regardless the plan, each eventually led to plateaus and/or didn't seem sustainable.
Though I'm a big believer in "the journey", and grateful for the progress made during the previous dietary dances, I feel I may have finally constructed the dialy food diary I've been aiming for.
The most recent entry..."Greens to Go," my latest meal prep obsession.
Full transparency, it's just a salad in a mason jar, but if you've read my posts before, you understand my adoration for alliteration.
I've always thought salads would be a great option, proven by my previous addiction to Chik's Cobb Salad, but never experimented with prepping them myself. Thankfully, I've gotten my breakfast & dinner preps almost down to a science, which it allowed me to shift the focus to the one thing that was missing, a strong lunch.
First came the search for the containers, which only took days of deliberation and I'm still urked that they only came in a pack of four (who the fuck only meal preps for four days...) but figured I could figure something out for day 5, or just not be a bum and was one of the others...Thankfully so far so good.
Regardless the container, the more important problem was what the hell i was going to put in the then. Ultimately, I decided not to over think it. I know it will change and evolve over time. However, the current ingredients are as follows: (which have already changed since writing this post)
Organic Cranberries
(1) Diced Mini cucumber
(1) Whole Chicken Breast
Cherry Tomatoes
Blue Cheese Crumblies
Pumpkin Seeds
Crushed Pecans
Shredded Kale
And of course, my delicious Salad Sauce!!

IN THAT ORDER!!!
Quick tip, the order of ingredients DOES matter. If layered poorly, some can leave others soggy and gross by the time you get to it. This was a big factor when choosing a container. Haven't done me wrong yet!!
As always, if you choose to give it a go, make it your own!! I plan to continue tweaking and experimenting, but regardless I'm loving the new dietary addition and feel like its a great step in the right direction toward a healthier and well-balanced diet.
